2 large poblano peppers, seeded & veins removed
1 c. shredded Pepper-Jack cheese
3 eggs
1/4 c. milk
1/3 c. flour
1/2 tsp. baking powder
1/4 tsp. cayenne pepper
1/8 tsp. salt
1/2 c. grated Cheddar cheese

Directions:
Directions:
Blanch peppers in boiling water; drain & chop. Place peppers evenly in bottom of a well-greased 1 1/2 qt. shallow casserole dish. Top with Pepper-Jack cheese; set aside. Whisk eggs & milk together. Combine dry ingredients; beat into egg mixture until smooth. Pour over peppers & cheese in casserole dish. Bake, uncovered, at 450 º for 15 minutes or until set. Remove from oven. Sprinkle with Cheddar cheese & let stand until cheese melts. May garnish with salsa.
