Cake:
2 c. sugar
1 1/2 c. oil
4 eggs
2 1/2 c. flour
2 t. salt
2 t. soda
2 t. cinnamon
3 c. grated carrots
1 1/2 c. chopped nuts
Cream Cheese Frosting:
1 8 oz, pkg, cream cheese
1/4 c. butter (softened)
1 1 lb. pkg. powdered sugar
2 t. vanilla

Directions:
Directions:
Cream sugar, oil and eggs (beat medium speed for 2 minutes). Sift dry ingredients together and add to oil mixture and beat at low speed for one minute. Add carrots and nuts. Pour into a greased and floured 9 x 13 pan. Bake at 300º for one hour.
Mix together frosting ingredients and spread over cake when it is cooled.
