3 c. of your favorite seafood; combination of scallops, shrimp, clams, crabmeat, etc.
2 T. butter
1/2 c. onion, chopped
2 garlic cloves, minced
1 (8 oz.) pkg. cream cheese
3/4 c. (3 oz.) Parmesan cheese, grated or shaved
1/2 c. butter
1/2 c. milk
8 oz. fettucini, cooked & drained

Directions:
While pasta is boiling, saute onion and garlic in 2 T. butter for 5 or 6 minutes. Add seafood and cook through. In large saucepan, melt the cube of butter and add milk, cream cheese, and Parmesan cheese. Stir over medium low heat until smooth and creamy. Add seafood mixture to sauce and serve over fettucini with your favorite French bread.

This is an easy meal to substitute chicken in place of seafood. John and I almost always order pasta when we go out of town and this is just as good as any restaurant. I got this recipe out of a 1988 Kraft Philadelphia Cream Cheese cookbook. Haven't found a better recipe since.
