1 cooked and mashed butternut squash
(or 3 lb. cooked carrots)
4 T. flour
1 T. baking powder
1 1/2 c. sugar
4 eggs
1 1/2 tsp. vanilla

Directions:
Directions:
For carrots: wash, clean well and/or peel if necessary, and slice carrots into 1/2 inch slices. Cook in small amount of water until soft. Whip until smooth after draining..
Mix sugar, flour and baking powder well and mix well with eggs, butter and vanilla. Blend with carrots or squash. Place in lightly greased baking dish. Bake at 350 degrees for 90 minutes or less, according to your oven. Dust with confectioners sugar
Yield: 8 to 12 servings
