1 1/2 c. self-rising cornmeal mix
1 c. all-purpose flour
1/4 c. sugar
1/4 c. oil or shortening
2 eggs, slightly beaten
1 c. cracklins (or crackerlings)
(Don't use pork skins)

Directions:
Directions:
Heat oven to 450 degrees. Put oil in pan and let it heat in the oven for five minutes. Mix the other ingredients and add oil after it heats. Add crackerlins. Bake for 20-25 minutes.
OPTION: Add 1/4 c. chopped onions, 1/3 c. chopped jalapeņos, 1 T. jalapeņo juice before baking.
