1pckg Chicken breast boneless thin sliced
1pckg Arugula or 2 large handfuls
3 c Bread Crumbs in bowl
2 Eggs
1 jar Roasted Red Peppers
5 medium sized balls of Buffalo Mozzarella
2 Lemons
2 cloves garlic chopped
5 tbsp. olive oil for cooking
salt and pepper

Directions:

Pound chicken with mallet to thin it. Chop garlic. Crack eggs into medium bowl and whisk some.
Heat oil on stove medium high heat w/ garlic.
Dip chicken in egg mixture and coat. Then follow by dipping in breadcrumb bowl and coating it. Cook until browned, flip over, cook thoroughly. Season with lemon, salt and pepper. Slice mozzarella and peppers to bite size. Mix with arugula. Dress with lemon, olive oil, salt, pepper to taste.
