turkey giblets
boiling water
salt & pepper
1/4 c. butter
1c. each: chopped apple, chopped celery, chopped onion
2 eggs
1 (10 1/2 oz.) can condensed cream of chicken soup
poultry seasoning
ground sage
1 loaf day-old (stale) white bread, toasted & torn into bite-size pieces
turkey or chicken broth, if needed

Grease a shallow casserole dish, about 15"x9"x2." Preheat oven to 350.º Slowly, at a low simmer, cook giblets in boiling water until tenderized. Drain. Cut giblets into small pieces; salt & pepper. Set aside. Saute apple, celery, & onion in butter. Add soup, giblets, & eggs, mixing well. Pour into a large mixing bowl; stir in bread pieces until well-incorporated. If too dry, add a little broth (better to be too moist than too dry). Pour into prepared pan & bake until firm.
