3 tbsp. extra-virgin olive oil
2 tbsp.ginger-garlic paste
1 large onion, coarsely chopped
1 can diced tomatoes
6 sun-dried tomatoes
3 tbsp. fresh basil, chopped
salt,freshly ground black pepper to taste

Directions:
Directions:
Soak the sun-dried tomatoes in hot water to cover about 20 min.
Heat the oil in heavy pan & saute ginger-garlic gently for about 3 min.
Add the chopped onion & cook for another 5 min.
Add the canned tomatoes undrained, the sun dried tomatoes cut into small pieces & the liquid. Add the basil & cook gently for 20 min.
Serve with polenta.
