1 1/2 C brown sugar
1/2 C shortening
1 egg, beaten
1 C buttermilk
2 C flour, sifted
1 tsp soda
1 1/2 C finely chopped rhubarb
Topping ingredients:
1/2 C sugar
1 tsp cinnamon

Directions:
Directions:
Cream shortening and sugar; add egg, vanilla and sour cream and blend. Add flour and soda; mix well then add rhubarb. Pour into prepared 9 x 13 pan. Sprinkle topping ingredients on top of batter. Bake at 350º for 30-35 minutes.

A very fun-loving lady who was Thea's sister-in-law. Eva was married to Jay Smith and had two sons. She made cooking look easy and it was certainly tasty.
