16 oz. mozzarella cheese, 1 medium green pepper, 1 small onion, 2 medium zucchini, 3 large boneless chicken breasts, 3 T. flour, 1/2 t. salt, 1/4 t. pepper, 3 T. oil, 1.5 cup spaghetti sauce.

Chop green pepper. Slice onion and zucchini. Set veggies aside. Pound chicken breasts well. Cut each one into 6 pieces. Roll in flour, salt & pepper, then cook in a large skillet over medium heat until brown. Remove the chicken from the pan. Cook the veggies until tender. Put the chicken back in the skillet with the veggies, add sauce and simmer for 15 minutes. Slice the 16 oz. of mozzarella cheese into 1/4" thick slices. Cover the entire top of the chicken/veggie/sauce mixture with the cheese and cook JUST UNTIL the cheese is soft but not melted into the skillet. Serve immediately.

I do all of my chopping and slicing of veggies and cheese before I start any of the cooking. If you don't care for zucchini, you could replace it with another vegetable of choice.
