2 Cloves of Garlic
1 Large Yellow Onion
Olive Oil
2-3 Boneless Skinless Chicken Breasts
1 Can Crushed Tomatoes
1 Can Canellini Beans
Fresh Basil
Crushed Red Pepper
Splash of Red Wine
1 lb. Penne Pasta

Directions:
Directions:
Chop onion and garlic, saute in olive oil in a deep saute pan.
Cut chicken into 1 in cubes, add to saute pan and lightly brown. Add crushed tomatoes and a splash of red wine. Stir periodically. (If desired also add 1 can of drained stewed tomatoes). Bring to a boil.
In the meantime, drain and rinse canellini beans. Add to saute pan. Stir in fresh basil and crushed red pepper.
Cover pan and simmer for 10-12 min or until slightly thickened.
Remove from heat and serve overtop of penne. Best accompaied with Italian bread, butter, red wine, and some freshly grated parmigiano
