Giblets from inside the turkey
Water
1 carrot, cut in chunks
1 onion, quartered
1 bay leaf
1 celery stalk
peppercorns, tsp
a few parsley stalks
salt


Turkey Gravy
Rich Giblet Stock
De fatted Drippings from the Turkey
wonder flour (1/4 cup to 1 cup cold water)

Make a very rick giblet stock.
Take all ingredients, bring to a boil, skim surface, then simmer with lid half on for at least 2 hours. I usually simmer for the length of the time it takes to cook the turkey (almost 5 hours) Depending on the time you simmer, is the amount of starting water you want to consider. Strain all the bits out.
Turkey Gravy
Mix 1/4 wonder flour with 1/2 cup cold water in a jar, increase this depending on the amount of gravy you are making (usually double it)
Bring giblet stock to a boil, defat the drippings, add wonder flour and water mix and put all in the roasting pan of the Turkey and mix together. Heat until it bubbles. I usually transfer this into a small pot, and keep until ready to serve

I always need to consult my sisters or sister in laws to help me with my gravy. xmas 2010, Andrea showed me the trick with the wonder flour mix.. The gravy was superb! No lumps, and the rich giblet gravy and drippings gave it a wonderful taste.
