2 cups leftover turkey gravy from Thanksgiving
2 cups chopped or shredded cooked turkey
1 egg beaten with 1 tbsp water
panko or unseasoned breadcrumbs
mashed potatoes for serving

If you don't have leftover gravy:
2 tbsp butter
1 tbsp chopped onion
4 tbsp flour
1 cup turkey or chicken broth
salt
black pepper

Directions:

Mix enough cold gravy with turkey to bind. Shape into patties, logs or cones. Dip into egg mixture then roll in breadcrumbs. Fry or bake at 350º for 25 minutes until golden brown. Serve with hot gravy over mashed potatoes.

If you have no leftover gravy:
Heat butter in sauce pan, saute onion until soft. Add flour and make roux. Add broth and whisk until smooth. Cook and stir until thickened. Season with salt and pepper. Add turkey and chill. Then proceed as above.

A great way to use Thanksgiving leftovers. You can add a little leftover bread stuffing or mashed potatoes to turkey mixture if you like.
Can make with chicken as well.
