1 1/2 lb beef tenderloin tips
4 tbsp butter
1 can beef broth (10.5 oz)
1 bay leaf
2 tbsp olive oil
1/2 onion chopped
2 tbsp flour
1/2 lb sliced mushrooms
1/4 cup red wine
salt and pepper to taste

Directions:
Directions:
Melt 2 tbsp butter in skillet, add onions and simmer 4-5 minutes until tender, add mushrooms and cook until softened. Remove from pan and set aside.
Add other 2 tbsp butter, blend in flour until smooth. Add broth and stir until smooth. Add bay leaf and simmer 2-3 minutes. Remove bay leaf. Return onions and mushrooms to broth.
In another skillet add oil and brown meat in batches. Add meat to broth mixture as it is browned. Do not overcook meat!! After last batch of meat is removed, deglaze pan with red wine scraping up any browned bits.. Add to broth mixture. Cook 2-3 minutes to combine flavors.
Serve with rice or noodles.

I buy whole tenderloins when they are on sale and cut my own filet mignon steaks. I use the small pieces and tips to make this. It is quick to make and good enough for company.
