1 1/4 lb lean beef cubes (stew meat)
4 large potatoes peeled and cut into 1 1/2 inch pieces
1 lb carrots peeled and cut into 1 1/2 in pieces
1 large onion peeled and cut into 4-8 pieces
3 tbsp oil
salt and pepper to taste
1/2 cup flour

Directions:
Directions:
Place flour into plastic bag
Toss in meat to coat
Heat large pot, add oil then meat, salt and pepper, brown meat thoroughly scraping browned bits from bottom of pan.
Add water to just cover meat (Mom's recipe says about 3 glasses) and simmer half covered for 45 minutes.
Add vegetables, adjust seasonings to taste
Add additional water to just cover meat and vegetables
Stir and cook another 1 1/4 hours half covered
