Directions:There’s no set recipe, and many variations. Basically, it’s fried eggs on a tortilla, topped by some form of salsa or chile sauce. Beans are often added, either on top or on the side. Refried beans or black beans are typical. “Fast and easy” would involve canned beans. “Cheap” would involved soaking and cooking dry beans in advance.
A more traditional version would involve lightly browning a corn tortilla (I prefer flour tortillas) in an oiled frying pan, removing the tortilla, then frying an egg or two in that pan, cooked as hard or soft as you like. Place the tortilla on a warm plate, topped by the fried eggs, and your favorite salsa (Pace Picante Sauce is my favorite) or chile sauce. Refried or black beans go on the side (or top, if you prefer).Its simplest form (what I usually make) is canned chili heated in a microwave and poured over scrambled eggs. Diced onion and grated cheddar cheese are my favorite toppings. The tortilla is optional for me. The eggs can be cooked in the microwave, if you’re familiar with the technique. However, a stovetop pan is usually just as fast. While not as tasty or elegant as a tortilla browned in a frying pan, it’s considerably quicker to heat one in the microwave for about 15 seconds. |

-Huevos Rancheros is a Spanish term that‘s pronunced “way vos ran chair os”. If it helps with pronunciation, the Spanish “os” sound uses a long “O” sound and a soft “S” sound, as in hOSt.
-This can be a healthy meal, especially if you were to use egg substitute in place of unborn chickens, and black beans instead of refried ones. Various levels of vegetarianism can be accommodated by examining the labels on ingredients. With just a bit of work on the night before, preparing and consuming this meal will take no more time than waiting in line at a fast food place, be less expensive, better for the environment, and much healthier for you.
