3 Tbs. Balsamic Vinegar
1 Tbs Olive Oil
1 Clove garlic (crushed)
2 Cups cooked and cubed Chicken (broil or boil but don't season the chicken)
1 med. zucchini quartered and cut into slices
1 ripe tomato cubed
1 jar (6 1/2 oz jar) marinated artichoke hearts
2 Tbs fresh basil
1/4 tsp salt
1/8 tsp pepper
1 small loaf Italian bread sliced into 1/2 in.diagonal slices
4 oz part skim mozzarella cheese thinly sliced
1 avocado cubed

In a small bowl combine vinegar, oil and garlic; set aside. In a large bowl combine chicken, zucchini, tomato, artichoke heart(with marinade), basil, salt & pepper. Add vinegar mixture and toss to combine.

Heat broiler. Place bread slices on large baking sheet and top with the sliced cheese. Broil until cheese is melted. Place 2 cheese toasts immediately on each of 4 serving plates. Top with chicken mixture and cubed avocado. Serve.
