Norwegian Pancakes/Crepes Recipe

6 eggs
3/4 c. flour
1/2 tsp. salt
2 c. milk

Directions:
Directions:
Place in a blender or food processor, the eggs, milk, flour and salt. Process (stopping motor to scrape down sides once or twice) until smooth.
Into a well oiled frying pan on medium heat, put 2 T. batter, quickly tilting pan so batter flows over entire surface. Cook until pancake appears dry and edge is lightly browned. Turn once to brown lightly on both sides, then turn onto a plate.
Sprinkle granulated sugar on pancake before rolling up. You can either pick up with fingers or use a fork.

I remember dad making these for us as kids. We used granulated sugar and then sprinkled lemon juice before we rolled them up. You also can use jam, jelly, fruit, cream cheese, etc. This recipe was taken from the cookbook that Grandma Esther Summers' sister Aunt Dorothy Daul made for us.
