10 slices day-old bread
12 oz. bulk pork sausage
1 medium onion, chopped
4 oz. can chopped green chiles
8 oz. shredded cheddar cheese
8 oz. shredded Monterey jack cheese
5 eggs
2 c. milk
1 c. salsa

Directions:
Directions:
Cut bread into 1" cubes and set aside.
In large frying pan, cook and crumble the sausage until it has yielded some fat into the pan. Add the onions and continue cooking until they are translucent and the sausage is no longer pink. Drain off the fat. Stir in the drained green chiles. Set the mixture aside.
Grease a 9x13" casserole and layer half of each:
bread, sausage mixture, cheddar cheese and Monterey jack cheese. Repeat layers.
In a medium bowl, lightly beat the eggs and stir in the milk and salsa. Pour egg mixture over the layers in the casserole dish, cover and refrigerate several hours or overnight.
Bring casserole to room temperature (about 1 hour), then bake at 325º for one hour, or until knife inserted in center comes out clean.
