Seven Grain Bread Recipe

Ingredients: 1 tsp. salt 2 c. 7-grain cereal 3 c. water 2 cubes margarine/butter 1/2 c. rounded sugar 9 tsp. salt 3 c. buttermilk 3 T. dry yeast 3 c. very warm water 16-18 c. flour 1 tsp. soda

Directions:Combine cereal, salt and 3 cups water. Cook until soft and water is absorbed. Remove from heat and add margarine/butter, sugar and salt; set aside to cool. Scald buttermilk and pour over cereal. Cool until lukewarm. Dissolve yeast in very warm water. Let work/activate a few minutes. Sift soda and a sifter full of flour into an 8 quart plastic container. Add cereal mixture. Beat until glassy and elastic. Gradually add another 8-9 cups flour, kneading between additions. Dough should be left a little sticky. Let rise until double. Push down and let rise again. Make into loaves and place in greased (shortening) pans and let rise. Bake at 400º for 25 minutes. |

Notes: When I met Dave's mother, this is all they ever ate for bread. This is what he grew up on. I was fortunate to be able to enjoy it also. She didn't stop making bread until her hands got so arthritic. She made bread every week. All by hand. She used a huge plastic bowl, an aluminum bowl would work to mix everything in. Sometimes she would make 5 loaves and use the rest for rolls. When making the rolls they did not touch sides on the cookie sheet. Wonderful rolls. Depending on the brand of cereal, she sometimes would add sunflower seeds if they weren't in the mix. I have made a reduced recipe for the bread machine. It is also in this book.
