3 Lbs Russet Potatoes, peeled and washed
1 egg
2 Tbs. flour
1 Large onion
Salt and Pepper to taste

Directions:
Directions:
Grate potatoes on fine side of box grater. Put in clean dish towel and wring out all the water. Put potatoes in a bowl, add egg, flour, onion, salt and pepper. Mix well. Heat about 2 Tbs. oil in a hot nonstick skillet. take 3 Tbs of the potato mixture and fry until crisp and brown around the edges. flip pancake over and fry on the other side till nice and crispy. Serve with apple sauce or sour cream.

No shortcuts (like buying shredded potatoes) with this recipe.
