6 chicken thighs
6-8 garlic cloves (finely diced or crushed)
2 bay leaves
3/4 c white vinegar
1/4-1/2 c soy sauce (do not use lite soy sauce)

Directions:
Directions:
Mix vinegar and soy sauce. Marinate chicken in the soy mixture for a minimum of two hours. Save the marinade.
Brown chicken in a skillet with a little oil. While browning add bay leaves.
After 10-15 minutes add garlic. Drain off oil, when the garlic becomes fragrant add remaining marinade and cover. Simmer for 20-25 minutes.
Uncover and continue cooking until sauce reduces by half. (5-7 minutes)
Turn chicken while the sauce is reducing to completely coat.
Retain sauce to pour over steamed rice, then serve.
