DUMPLINGS:
4 tbsp. (1/2 stick) butter, at room temperature
1 cup sugar
3 1/2 cup all-purpose flour
3 tsp. baking powder
1 cup whole milk
2 tsp. pure vanilla extract

BERRIES:

2 1/2 cups sugar
1 1/2 quarts blackberries

Directions:
In a heavy sauce pot, on medium heat combine water, sugar, and berries and cook until sugar is dissolved. Reduce heat to low and cook until berries are very tender. Strain through sieve to remove seeds (if you don’t like the seeds), and return strained berry syrup to pot over medium heat until syrup begins to simmer. Low to medium low heat.

Soften (not melt) butter and add sugar gradually, beating with a wooden spoon until creamy. Add eggs and vanilla and mix until smooth. Sift together flour & baking powder. Add flour to egg mixture, alternating with milk, ending with flour. Beat with each addition until smooth.

Drop dumpling dough into berry syrup by spoonfuls, cover pot and cook until dumplings have risen. Turn dumplings and cook to coat other side with syrup.

Serve warm with a scoop of vanilla ice cream!
