2 bone in & skin on chicken breasts
salt & pepper
olive oil

Preheat your grill to medium & clean the surface very, very good with lemon water & paper towel. Salt & pepper the chicken to your liking, but slightly more than you think gives it a good crust. Lightly spray the chicken with olive oil & place on your grill.

Do not let your grill burn the chicken.

Do each side 3-4 minutes each, then repeat until the skin outside forms a slightly brownish exterior. NOTE: the slower the better for the chicken. The oil and skin will hold the juices inside the breast while it is thoroughly cooked. Overall, it should take12-15 minutes total depending on heat but you will have a wonderfully grilled chicken breast. (KEY here is the salt/pepper and the fact the bone and skin are still on the chicken)

You can also do the same with legs or wings, but they take less time.
