4 (6oz) beef tenderloin steaks
2 Tbsp. coarse-grain sea salt
1 Tbsp. coarsely ground pepper
2 Tbsp. olive oil

Balsamic Sauce:
1/4 c. dry red wine
1/4 c. dry sherry
3 Tbsp. balsamic vinegar
1 shallot, chopped
2 garlic cloves, chopped
2 egg yolks
1/3 c. unsalted butter, melted

Directions:

Rub Tenderloin steaks evenly with salt and peper
Cook steaks in hot oil in a large ovenproof skillet over high heat 2 -3 minutes each side.
Bake at 350º for 8-15 min or to desired degree of doneness. Serve with Balsamic Sauce and garnish if desired.

Balsamic Sauce preparation:
Bring first 5 ingredients to a boil in a small saucepan. Cook 2 min. Cool mixture.
Whisk egg yolks into wine mixture and cook over low heat, whisking constantly, until thickened.
Slowly whisk in butter until blended. Serve immediately.

Excellent dish for a very special meal.
Serve with garlic mashed potatoes or roasted potatoes. Fresh green beans or asparagus are also very tasty with the tenderloin.
