2 box whole wheat couscous
1 med zucchini, chopped
1 yellow squash, chopped
3 green onion( or reg onion)
1 can diced tomatoes , drained
1 garlic clove, minced
2 Tbl fresh basil
2 Tbls olive oil

Directions:
Directions:
Cook couscous according to package directions. Saute all veggies with garlic in olive oil about 2-3 min or slightly tender. Combine veggies with couscous and serve. This is good hot, room temp, or cold

If I am having company I saute the veggies ahead and put them in the refrigerator and then make the couscous the day of and add veggies.
