1/2 c butter (softened)
1c sugar
2 eggs
3 ripe bananas (smashed)
1 1/4 c all purpose flour
1 tsp baking soda

Directions:
Directions:
Preheat oven to 350º
In a large bowl, cream together the softened butter and sugar, add eggs and bananas.
Blend with an electric mixer.
Add flour and baking soda to the wet ingredients.
Use a wooden spoon to blend, do not overmix.
Spoon into a standard bread pan (spray with pam first) or 12 cupcake/ muffins.
Bake bread for 1 hour/ muffins for about 40 minutes-may be sooner.

Variations:
Double the recipe and it is the perfect amount for a bundt cake pan...still one hour to bake. Sprinkle powered sugar on top to dress it up for a party!

Use just 2 smashed bananas with 1 single- serving cup of either applesauce, mango/peach sauce or a small ripe, smashed pear.

Layer left over banana bread with any kind of fresh berries and 'cook and serve' vanilla pudding (pour the pudding over while it is still very hot and liquidy) to make a crowd pleasing dessert. You may even drizzle it with a favorite liquer to make it more "grown up"! This is great to make ahead of time so that the flavors blend together.
