1/2 c. butter
2 c. sharp cheddar cheese, grated
1 1/2 c. AP flour
1 tsp. baking powder
1/2 tsp. Worcestershire Sauce
or
1/4 tsp. cayenne pepper (optional)
3/4 c. pecans, chopped fine (optional)

Cream together butter and cheese. Add in flour gradually. Add other ingreds. Mix. (It appears that it won't mix well but keep kneading and the dough will form and hold together.) Make dough into two logs so you can slice and make wafers about size of silver dollars. Refrig. the dough before slicing, wrapped in saran wrap overnight or for at least 2 hours. Cut into 1/4" slices. Bake at 350º for 25 mins. Watch them so they do not burn. Use the silicon sheets on the trays to prevent burning.

Nanna suggested we make shaped cookies for Candice from this dough. It was a great success for her to have shaped cookies! Candice was on a sugar free or lower sugar content diet for years when she was in school. As we did not allow her to have sugar cookies or cake, we had to find other items to celebrate her special occasions.

Recently we tried to substitute gluten free flour for the flour and increase "sticking togetherness" by adding a small amount of water. The wafers need to have more pepper, use a very sharp tasting cheese, and use a mixture of rice and soy flour.
