1 c. raisins
boiling water
3/4 c. AP flour
3/4 c. w. wheat flour
2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
1 egg
3 T. oil
3/4 c. lowfat yogurt
1/2 c. brown sugar
1 tsp. vanilla
1 c. carrots, finely shredded

Directions:
Directions:
Pour boiling water over raisins enough to cover and let stand 5 mins. Combine flour, cinnamon, ginger, nutmeg, salt, baking soda, and powder. Drain off any excess water from raisins and add raisins to this mixture. Beat egg until fluffy. Beat in the oil. Mix in yogurt, sugar, and vanilla. Once mixed, add in carrots. Add flour mixture to the other mixture. Stir until combined. Pour into greased and lined 8" x 4" pan. Toppings: 1 T. rolled oats and 1 T. oat bran. Sprinkle this over top of batter. Bake at 350º for 50 to 55 mins. Let stand in pan 5 mins. Remove and cool.
