2 lbs. red potatoes washed and cut in 1/4 slices
2 T olive oil
salt and pepper to taste
1 pkg. dry onion soup mix (reduced sodium if available
1 1/2 c sour cream
4 T chopped scallions
3 T milk
3 T panko crumbs
1/2 c grated Gruyere cheese

Directions:

Preheat oven to 350º
Place sliced potatoes in bowl and toss with olive oil. Add salt and pepper to taste. Mix together the sour cream, scallions, milk and soup mix. Add to the potatoes and toss to coat. Layer in greased 9 x 13 baking pan. Sprinkle the top with panko crumbs and Gruyere cheese. Bake 45 minutes or until tender.
