1/2 c. granulated sugar
2 pkts. (1/4 oz. each) rapid rise yeast
1 1/2 tsp. salt
5 c. flour, divided, plus more for kneading
2 large eggs, lightly beaten
1/2 c. butter, melted & cooled to room temp.
1/2 c. shortening
1/4 c. melted butter
1 1/2 c. warm water (110-120 degrees)

Combine sugar, yeast, salt, & 2 c. flour. Cut in 1/2 c. shortening with a pastry blender until crumbly. Stir in eggs to make a lumpy & dry mixture. Stir in 1 1/2 c. warm water, 1/2 c. melted butter, & 3 c. flour until well-blended (mixture will remain lumpy). Cover with a towel & let rise in a warm place (85º), free from drafts, for 20 minutes. The dough will only slightly rise. Turn dough onto a floured surface & knead. Pat or roll dough into a 13"x9" rectangle that is about 3/4" thick.** Cut dough into 18 rectangles with a pizza cutter or sharp knife. Place in a lightly greased 13" x 9" pan. Cover with a towel & let rise in a warm place, free from drafts, for about 20 minutes. Rolls should rise to doubled. Preheat oven to 350,º then bake rolls 25 minutes. Brush with 1/4 c. melted butter & bake 5 minutes more until golden.

.** The dough made larger than 13" x 9" so I used a second pan. I used Smart Balance in place of shortening.
