1 package Bean Curd sheets (it can be flat sheet or rolled);
10 pieces dried shiitake mushroom;
3 lb pork bone (or 1 ½ lb pork meat cut into pieces);
10 pieces dried red plum (or black plum or date);
2 L water;
1 ½ teaspoon salt (or more for flavor)

1. Soak the bean curd sheets in cold water for 1 to 2 hours until they are soft.
2. Soak the shiitake mushrooms in cold water for 1 or 2 hours until they are soft.
3. Wash the red plums.
4. (Optional) If you bought port meat, cut the pork meat into pieces.
5. Boil the water.
6. Once boiled, add the pork bone to the water.
7. When the water is boiled again, turn the heat lower. Keep it boiling for 1 hour to cook down the meat.
8. Cut the bean curd sheets into 1-2 inch strips.
9. Cut the mushroom into slices.
10. Turn the heat to high and add the bean curd, mushrooms, and red plums.
11. When boiled, turn the heat to low and cook for 30 minutes. Watch the soup so that the bean curd does not cook to bits. The addition of the salt is very important since it will help prevent the bean curd from melting to bits.
12. Add salt to the soup and cook for another 30 minutes.
