2/3 cup shortening
2 1/2 cups cake flour
1 1/2 cups sugar
1 1/4 tsp. baking power
1 tsp. baking soda
1 tsp. salt
1 1/4 cup mashed bananas
2/3 cup buttermilk
2 Tbsp. vinegar
2 eggs
2/3 cup nuts

Directions:
Directions:
Stir shortening just to soften, sift in dry ingredients. Add bananas and 1/2 cup buttermilk. mix well until all flour is dampened, then beat vigorously for 2 minutes. Add remaining buttermilk, vinegar and eggs, beat 2 minutes longer. Fold in nuts. Bake in 2 paper lined 9 x1 1/2 inch round pans at 350º for 35 minutes or until done. Cool 10 minutes in pans. Remove and cool thoroughly.
