4-6 Chicken breast halves
salt and pepper to taste
1 T. olive oil
1 T. unsalted butter
Directions:
Directions:
Preheat oven to 350 degrees
Trim chicken of excess fat if desired.
Bring large pan to med high heat and when hot add the oil and butter.
Salt and pepper one side of chicken and add to pan then salt and pepper the other side
Saute till brown on each side (about 2 minutes) then transfer chicken to a sheet pan.
Bake in oven for 20 minutes
Remove from oven and top with what you like (suggestions below) then return to oven for 5 minutes
Allow to rest for 5 minutes before serving

Toppings (come up with you own as well):
1 Parmesan
tomato sauce
Oregano
Parmesan cheese
mozzarella cheese

bacon
cheddar cheese

This is a great way to offer chicken with an option of topping choices, so all of you guests get what they want.

To give even more choices you can bread all or some of the chicken before adding to pan:
mix 2 eggs,1 c.milk, garlic powder, salt, pepper in one pan and seasoned bread crumbs in another. dip chicken in egg mixture and then coat in bread crumbs. Then saute in pan.
