2 sm. tub (1 c.) applesauce
1 c. brown sugar
1/4 c. white sugar
1/2 c. eggbeaters
1/4 c. canola oil
1 tsp. vanilla
1 tsp. of almond or rum flavoring
2 c. AP flour
1/2 c. WW flour
Several shakes of cinnamon*
1/2 tsp. light salt
1 tsp. baking powder
1 tsp. baking soda
3 c. oats (oatmeal - 3 mins or long cooking kind)
1 c. raisins
1/2 c. cranraisins
1/4 c. unsalted nuts or 1/2 c. peanut butter
Sprinkle of wheat germ, raw bran or bran cereal
Sprinkle of flax seeds, ground finely
1/2 c. sunflower seeds, or any dried fruit

Mix applesauce, oil, br. sugar, w. sugar, egg beaters, and vanilla. Mix into this liquid mixture, the raisins, dried fruit, cranraisins so they can soak and get plumb. In another bowl, mix flour, salt, cinnamon, baking soda, and baking powder. Mix the two mixtures together. Now fold in oatmeal, raisins and all of the items listed after the raisins in the above list. Drop by spoonful on cookie sheet. Bake at 350º for 12 to 15 mins.
We like these small, flatten out with back of spoon, and evenly spaced using silicon sheet on top of the cookie sheet.

*We have also added as much as 3 tsp. cinnamon to flour and a quick sprinkle of nutmeg at the end of stirring the dry ingreds.
