3-4 cans cream of chicken soup (not diluted)
1 large carton of sour cream
1-2 pkg. of frozen green chilies (thawed - seasoned)
1/2 cup chopped onion (optional)
2 whole cooked chickens (or turkey) skinned & shredded
2 pkg. corn tortillas
1-2 pkg. shredded cheddar cheese

in a large pot, add the cream of chicken soup with the sour cream and mix until completely blended; add the seasoned Chile; onions and chicken stir to combine all ingredients.
Lightly fry corn tortillas until pliable; add mixture and top with cheese. You can either roll the enchiladas or make this casserole style (easier) layer corn tortillas, top with chicken mixture; layer with cheese, continue until all ingredients are used. pre-heat oven to 325º put in casserole, all ingredients are cooked so you only need to heat until cheese is melted.
