4 egg whites
1/2 c. sugar
1/2 c. pecan pieces
1/2 pint whipping cream
1/2 tsp. vanilla
1/4 tsp. cream of tartar
20 Ritz crackers, crushed
Additional chopped pecans, to decorate

Directions:
Directions:
Beat egg whites until soft peaks form. Gradually add sugar and cream of tarter, beating to very stiff peaks. Fold in cracker crumbs, pecans, and vanilla. Bake in 325 degree oven for 45 minutes. Cool thoroughly. Spread whipped cream on top, and sprinkle additional pecans on top.
