3/4 c. butter
1 8 oz. cream cheese
2 c. sugar
2 large eggs, slightly beaten
1/2 tsp. vanilla
3 c. AP flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. baking powder
1 1/2 c. mashed bananas
1 c. pecans, chopped

Directions:
Directions:
Cream butter and sugar together. Then stir in the cream cheese, eggs and vanilla. Add butter/sugar to the egg/cheese mixture. In a large measuring cup combine flour, soda, powder, and salt. Mash the bananas- usually 6 bananas. Mix all together. Pour batter into 2 greased and floured 8" x 4" loaf pans. Bake 1 hour at 350º. If you make muffins, then use those paper cupcake liners and bake for 25 mins.

To make cake:
Use 2 tsp of vanilla instead of 1/2 tsp. vanilla. 2 cups bananas (usually 6 to 8 bananas) instead of 1 1/2 c. Use 2 tsp. baking soda instead of the 1/2 tsp. and mix the baking soda into 4 T. of warm water. Increase the butter to 1 c. and do not use cream cheese. Do not use any baking powder.
