2 c. AP flour
1 c. white sugar
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
1 c. chopped cranberries, fresh or frozen
3/4 c. orange juice
1 egg, beaten
1 T. grated orange peel
2 T. oil
3/4 c. nuts, chopped (optional)

Directions:
Directions:
Combine flour, sugar, salt, baking powder and soda.
Mix, in another bowl, the cranberries, juice, egg, orange peel, oil, and nuts. Add dry ingreds. into wet ingreds. Mix only enough to moisten. Place dough in a metal loaf pan. Bake at 350º for 45 mins. Cool 15 mins. in pan. Remove and cool completely. Wrap tightly in foil. Freezes well.
If you use a 9" x 5" Pyrex dish, cook 45 mins.
If you use a 9" x 5" Corning ware dish, then cook 50 mins.

I made this for Nana for several holidays over the years. She was avoiding citrus at this time, so I did not put the peel in and reduced the OJ to 1/4 c. and used 1/2 c. water in its place. We all enjoyed it this way!
