Omi's Nut Cake Recipe

9 eggs (room temperature)
1 3/4 c. sugar
4 oz. ground almonds
4 oz. ground nuts
Frosting:
1 package semi-sweet chocolate morsels
1 stick butter
2 T powdered sugar
1-2 T of milk for blending
Decoration:
4-6 oz. of whole almonds

Cake:
Separate the eggs. Beat the egg whites in separate bowl until stiff ( I use a hand mixer for this.) Beat yolks until light yellow and fluffy. Add sugar, a little at a time and keep beating. Combine yolk mixture, nuts and whites. Pour into greased spring form pan and bake in preheated oven at 350º for ~ 1 hour. I check it 5-10 minute before, sometimes it is done earlier.
Frosting:
While the cake is baking melt the chocolate morsels with the butter over a very low flame. When it has melted,while continually stirring, add the powdered sugar and milk. Stir until it is all blended and smooth.
Decoration:
While you are making the frosting, boil the almonds until they are very soft. Drain, then remove the skin and split in half. The skin comes off easily and a sharp knife works well to slice the almonds.
Let the cake cool in oven so it won't deflate. Take out of oven and cool a little bit more at room temperature and then frost. You can decorate the cake with the halved almonds.

This is Omi's special Birthday Cake recipe that I got from Grandma Dorothea when I got married. Don't despair if it doesn't turn out, it comes out differently every time I make it!
