1/2 lb. ground beef
1/2 lb. Italian sausage
1/2 cup chopped onion
1 tsp. minced garlic
2 (8 oz.) cans seasoned tomato sauce
1 tsp. basil
1/2 tsp. oregano
1 large egg plant
2 beaten eggs
1/2 cup salad oil
2 1/2 cup shredded mozzarella cheese

Cook meats, onion and garlic until meat is browned; drain excess fat. In a medium sauce pan add tomato sauce, herbs; simmer 15 min. Peel & thinly slice eggplant. Dip slices in egg & fry in oil until golden brown on both sides. Drain eggplant on paper towels. Add tomato sauce to meat & mix well. In a casserole dish arrange eggplant, cheese and meat sauce in layers ending with the cheese. Bake 350º 30 min. or until bubbly and cheese is melted.
