1 c. cracked wheat, soaked in water &
1/2 c. lemon juice
2 c. of fresh parsley, chopped
1/2 c. scallions, chopped
2 c. tomatoes, slices
1/4 c. olive oil

Directions:
Directions:
Place 1 c. cracked wheat to soak in 1/2 c. liquid that is made up of hot water and juice of a lemon or 1/2 c. lemon. Chop the scallions and parsley. Slice the tomatoes. Now add the scallions, tomatoes, and parsley together with the cracked wheat. Sprinkle the olive oil over all. Stir as in folding so pieces stay intact. Serve with your choice of meal.

This is best with the fresh parsley but you can use dried parsley. You can add cucumber, if you wish, when you add the slices of tomatoes.
