1 box lasagna noodles
1 T oil
1 10 oz box frozen spinach (thawed)
2-3 c spaghetti sauce (1 jar Ragu etc)
2 eggs
1 1/2 c cottage cheese
Parsley to taste
3 T minced green onion
3/4 tsp salt
8-10 oz Mozzarella cheese
1/2 c Parmesan cheese

Cook noodles in boiling salted water
(Lay uncooked noodles in casserole to determine how many noodles you need cooked)

Mix eggs, cottage cheese, spinach, onion together

grease large casserole and layer bottom to top

bottom: noodles
sauce
noodles
spinach mixture
mozzarella cheese
sauce
noodles - repeat above layers - make at least 3 layers

Bake 350 for 30-40 mins. Let set 10 min before cutting

***Best if refrigerated overnight before baking!
