1 lb. pkg. dried red kidney beans
3 med. Bermuda onions, diced
3 cloves garlic
3 med. ham hocks- lean
2 tsp. salt
1 T. oil (for sautéing)

Directions:
Directions:
Use a 4 qt. pot. Wash beans and put on to cook. Saute diced onions, then saute garlic separately. This makes sure the garlic gets sautéed well. Add to beans. Add ham hocks and salt after the water has started to boil. (Salt keeps the beans whole.)
Turn to simmer for 4 hours. You may need to add more water as these cook.
