3 c. frozen cut green beans, or can - no salt added
1 sm. can mushroom stems and pieces, drained
1 T. cornstarch
1/2 tsp. ground mustard
3/4 c. chicken broth
1 T. butter (optional)
3/4 c. French fried onion rings (option: over 1/2 only)

Directions:
Directions:
In a greased 1 qt. baking dish, combine the beans, and mushrooms. In a small bowl, combine cornstarch and mustard, gradually stir in broth until smooth. Pour over the vegetables. Dot with butter. Bake, uncovered, at 375º for 25-30 mins. Sprinkle with onions. Bake 5 mins. longer.

You can leave out the butter. You can use fresh mushrooms. This is lighter in salt and fat since you are not using a can of soup, using low salt vegs, and the onion rings are on top only (other recipes call for you to mix in most of the onion rings). And you can do the 1/2 of casserole covered with onion rings trick.
