½ C. Sugar
½ C. Vinegar
½ C. oil (canola or olive)

1 – 11 oz can Shoe Peg corn, drained
1 – 15 oz can Pinto Beans, drained and rinsed
1 – 15 oz can Black Eyed peas, drained and rinsed
1 – 15 oz can black beans, drained and rinsed
½ yellow onion, chopped
4 stalks celery, chopped
1 cup black olives, chopped
1 cup green olives, chopped

(Optional) 1 – 2 jalapeño peppers, chopped - - OR ½ cup prepared sliced jalapeño peppers, chopped.

Bag of “Scoops” corn chips

Directions:
Directions:
Blend sugar, vinegar and oil in bowl.
Add other vegetables and toss with the dressing.
Refrigerate for at least 2 hours.

Stir and serve with scoops, corn chips, or other chips.

Keeps for a long while and can be made a few days ahead – if needed.
