1 lb dried Black-eyed Peas
1/2 lb. Seasoning meat (smoked ham hocks, bacon,
Hog jowl, ham)
1 large Onion, chopped
6-8 cups of Water
1 Tbs lard or shortening
1 tsp salt or to taste
1/2 tsp Thyme
pinch of Sage
1 Garlic toe (clove)

Directions:
Directions:
Rinse and sort peas. Cover with the water, add meat and simmer for 1 hour. Saute onion and garlic in lard/shortening, add remaining to the peas and simmer 1/2 hour or until peas are soft.
