16 4-part graham crackers (two of the packages from a 3-package box)
1 (8 oz.) pkg. cream cheese
3 cups milk
2 (3 oz.) boxes instant vanilla pudding mix (you will use this dry)
8 oz. Cool Whip®, refrigerated

Frosting:
2 (1 oz.) squares unsweetened baking chocolate, melted
2 T. honey
3 T. milk
2 T. butter
1 ½ cups powdered sugar, sifted

Butter a 9 x 13 inch Pyrex baking pan and put 1 layer of graham crackers in bottom of pan--cut to fit the pan. In the bowl of an electric mixer, beat cream cheese, adding milk a little at a time, until smooth. Mix on low or medium speed (don't whip). Add pudding and beat for 2 minutes, until stiff, at the same speed. Fold in Cool Whip. Pour 1/2 of the mixture over the graham crackers. Add another layer of crackers. Pour in the remaining pudding mixture. Top with another layer of graham crackers.


Frosting:
Melt chocolate in a double boiler or in a glass bowl set in a sauce pan that contains about 1/2 inch of water around the bowl. Using a whisk and mixing over the head, beat in honey, milk and butter. Stir in powdered sugar. Pour chocolate mixture over top of Éclair. Refrigerate, preferably over night.

This is a great dessert that is big enough for a large group of people. This dessert is best if you can make it the night before you want to serve it.
