6 oz. safflower oil (or other vegetable oil)
¾ cup sugar
1 tsp. vanilla extract
2 eggs
4 tsp. milk (you can substitute rice milk, soy milk or almond milk)
1 ¾ cups sweet rice flour, or 2 cups Featherlight® Flour Blend (I recommend Authentic Foods® brand for both flours)
1 ½ tsp. baking powder
¼ tsp. salt
¼ tsp. baking soda
2 tsp. xanthan gum
jam or other filling for Hamentashen

Thoroughly mix oil, sugar and vanilla. Add eggs; beat until light and fluffy. Stir in milk. Sift together dry ingredients. Blend into creamed mixture (using a hands-free electric mixer works best). Divide dough into four balls. Chill at least half an hour. Preheat oven to 375⁰. Roll out dough to 1/8” thick. Cut in shapes. Bake 6 - 10 minutes (time varies based on size and thickness of cookies). For Hamentashen: Use a circle-shaped cookie cutter or the top of a drinking glass to cut out the cookies from the dough. Fill the middle of the circle with jam or other filling and tightly pinch three corners to form a triangle with the filling in the middle. If you don't pinch it tightly enough, the circle will open and the jam will spread when you bake.
