3 eggs
2 cups sugar
3 tsp. vanilla extract
1 cup vegetable oil
3 cups flour
1 tsp. baking soda
1 tsp. baking powder
2 tsp. nutmeg
3 tsp. cinnamon
1 tsp. salt
2 ½ cups grated zucchini
½ cup pecan nuts, chopped

Beat eggs; add sugar and vanilla. In a separate bowl, sift flour, soda, powder, nutmeg, cinnamon and salt. Add oil to eggs, sugar and vanilla. Combine flour mixture with egg mixture; slowly hand mix. Add grated zucchini to mixture. Add nuts. Bake in loaf pans for 1 hour at 350º. Makes 2 - 3 loaves (2 medium, 3 small or double recipe for 2 - 3 large loaves).
